ampalaya - bitter gourd - bitter melon in our backyard

how do you like your ampalaya? do you eat this bitter vegetable raw or cooked? either way can do. i so love it when my mother-in-law make ampalaya salad/atchara. it's a good side dish for fried or grilled tilapia, milk fish or even pork. ampalaya is also one of the main ingredients in our famous pinakbet dish. just like me, mom-in-law is also a big fan of ampalaya, she even planted it on our backyard. she has a green thumb and can grow anything. she has that gift that any plant or flower she touches blooms.

today, i harvested six ampalaya fruits from it and it's so green, so fresh, so bitter he he he. we're having ampalaya salad for lunch, beef ampalaya with tuna for dinner, ampalaya in scrumbled eggs for breakfast, and then for lunch again, chicken sotanghon soup with ampalaya. ha ha ha ha... this will be our ampalaya week.

but, despite the bitter taste. i just love ampalaya. for me, if coconut is the tree of life, ampalaya is the vegetable of life. with all the health benefits that ampalaya can give, i am willing to have it in my every meal.

oh, by the way...i'm going to make ampalaya shake. want some?
